If you are beginning the diet, Thanksgiving is a great time to start. Which other two days of the year are more appropriate to take advantage of the Load and Gorge phase of the diet?   Let’s face it – Thanksgiving is a holiday celebrated by eating and the day after is just another day to enjoy those scrumptious leftovers?!

Now, if you are already on the hCG Diet, we have a great approach for you, as well!  Cook your own hCG approved Thanksgiving dinner and don’t miss out on anything!  Here are a few sample Thanksgiving meals and few recipes:

4 oz. Turkey breast with no skin 

Walden Farms Cranberry sauce (stop by and grab a jar today)

(This is considered a free food)

Slow Cooked Mashed Garlic Cauliflower-

Ingredients:

  • Cauliflower, cut into medium florets | 1 large head
  • Garlic | 6 cloves peeled
  • Sage | 1 tablespoon
  • Parsley | 1 tablespoon
  • Thyme | 1 tablespoon
  • Rosemary | 1 tablespoon
  • Fat-free, reduced sodium vegetable broth | 1 cup
  • Water | 4-6 cups
  • Salt | to taste

Directions: Place the cut up cauliflower in the crock-pot and top with garlic cloves, vegetable broth, and enough water to cover the cauliflower.  Cook on low heat for 6 hours or high heat for 3 hours.  Drain water and broth and add the cauliflower back into the slow cooker.  Use an immersion blender or hand blender to mash.  Season with salt to your taste and mix in the herbs.  Set on warm until ready to serve.

“Bread”

Calories per serving: 22

Ingredients:

  • Fat-free cream cheese| 1 package (8oz.)
  • Egg beaters | 4 tablespoons
  • Liquid egg whites| 8 tablespoons
  • Cream of tartar | ¼ teaspoon
  • Salt| 1 pinch
  • Stevia | 1 package

Directions: Preheat oven to 350 degrees. In one bowl, whip cream of tartar with egg whites until stiff peaks form.  In separate bowl, whip fat-free cream cheese, egg beaters, salt, and Stevia until smooth.  Gently fold cream cheese mixture into egg whites without breaking egg whites.  Spoon onto parchment paper lined baking sheet.  Bake at 350 until golden (30-40 min.)

Green Bean Casserole

Calories per serving: 1 cup = 60 calories

Ingredients:

  • Fresh or frozen green beans| 1 pound
  • Egg beaters | 2 tablespoons
  • Fat-free sour cream| 1 cup
  • Onions, chopped | ½ cup
  • Garlic, minced | 2 cloves
  • Mushrooms, sliced | 8 oz.
  • Paprika | ½ teaspoon
  • Garlic powder | ½ teaspoon
  • Mustard powder| 1 pinch
  • Red onion, sliced in rings | ½
  • Parmesan cheese| ¼ cup
  • Fat-free chicken stock | 2 tablespoons

Directions: Dip onion rings in egg beaters and coat with Parmesan cheese.  Bake in 400 degree oven until browned.  Mix green beans, sour cream, 1 Tablespoon egg beaters, onion, mushrooms, and spices.  Pour into a baking dish and top with onion rings.  Bake at 350 degrees for 40 minutes.

“Baked” Apples for dessert

Ingredients:

  • Baking apples, peeled, sliced thickly| 6
  • Water | ½ cup
  • Cinnamon stick | 1
  • Vanilla bean| 1
  • Fresh ginger, peeled | 1” knob

Directions:  Place the apples in a single layer on the bottom of a 4-6 quart slow cooker.  Add the water, cinnamon stick, ginger, and vanilla bean.  Cook on low for 6-8 hours or until the apples are tender and easily pierced with a fork.  Use a slotted spoon to remove the apples from the slow cooker.  Discard the cinnamon stick, ginger, vanilla bean, and water.  Serve hot.
